maple strawberry sorbet

Ingredients

  • 500g (4 cups) of fresh strawberries 
  • 80ml (⅓ cup) of dark maple syrup, for its robust taste
  • juice and zest of 1 lime
  • 60ml (2 tbsp) of water

Method

  1. Wash and remove green leaves of the strawberries. Place strawberries onto a cooking pan and in the freezer for 4 hours. Transfer into a airtight container and leave in the fridge, until you’re ready to prepare the sorbet.
  2. Add frozen strawberries, dark maple syrup, juice and zest of lime to a food processor and blend for 5 minutes. Scrape down the edges a few times with a spatula and add water if the consistency is too tick.
  3. When the texture is smooth (and there’s no fruit pieces left), transfer to a container and place in the freezer for 1-2 hours for a firmer texture. Serve into jars or bowls.
